Khakassian cuisine

The main food of the Khakas people, like that of other pastoral peoples of southern Siberia, consists of dairy products, plant-based dishes in summer, and meat in winter. The most commonly consumed meats are mutton, horse meat, and poultry.
One of the most famous dishes is “potkhy” — a traditional Khakas porridge made from sour cream cooked with flour. It is served hot and considered a national pride. In the past, a girl’s skill as a homemaker was judged by how well she prepared this dish.
Other notable dishes include:
“Oramys” — a dish made from thin sheep intestines, carefully cleaned, braided into plaits, and boiled;
“Oreme” — milk skin (the cream layer that forms when milk is heated), often mixed with ground bird cherry, lingonberries, and other berries;
“Talgan” — roasted and ground barley, used as a base for soups, porridges, sweets, and other dishes;
“Tamakh” — a festive dish made from freshly slaughtered sheep or horse. Various parts of the carcass are boiled in broth and served to guests according to a specific ritual.

Korchik
A drink made from fresh cow’s milk. The milk was whipped with a long wooden stick called a korchik. At the end of this stick was attached a dense felt disc, stitched through with threads. Fresh milk was placed over a low fire, removed just before boiling, then poured into a clay pot, and the korchik was rolled between the palms to create a thick, rich foam.
